An Explanation of the Delicious Raspberry Mirror Cake

Well another fancy cake that we make here. It’s quite seasonal. Being summer here, we love a lot of red fruit such as raspberries, strawberries, mixed berries all mixed together.

Therefore we have done a raspberry mousse here which we call the raspberry mirror, but this one’s got a little tricky thing inside. It’s got a lychee cream in the middle. So we did some lychee and a bit of sauce and we incorporated this lychee filling as well as the raspberry and a very good crunchy coconut biscuit. Therefore you have three different levels of consistency within this cake. It’s quite refreshing, very good for summer. But it only lasts for a couple of months because the fresh fruit will slow down after the summer. Then I will move on to some other flavors. But as you can see, it’s quite shiny on the top. It’s a bit like a yogurt I would say, but it’s quite tasty.
It can be decorated for birthdays or any kind of party you might like. So enjoy! Bon appetit!
