How to Make the Most Delectable Eggless Vanilla Cake (Recipe)

Most novice bakers are highly reliant on eggs in their baking and it’s true that these impart a very fluffy and rich texture to their cakes. The one thing to keep in mind is that eggs aren’t crucial in creating a delicious, fluffy cake. When it comes to baking an eggless cake, it’s a lot about chemistry that relies on a mix of leaveners (baking soda & baking powder), as well as vinegar, to lend a beautiful lofty, airy rise to the cake.

Regardless of whether you want to bake an eggless cake for dietary reasons or because you have run out of eggs, this recipe should do the trick. You can use it in toppings or pairings as you like and will find it lends an excellent flavour to any combination dessert as well.

Eggless Vanilla Cake Recipe

This makes one 9×13” sheet cake

The Ingredients

  • 2 1/2 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 3 tablespoons of granulated sugar
  • 1 can (14 ounces) of sweetened condensed milk (you can make your own too)
  • 1/2 cup (1 stick) of unsalted butter, melted & slightly cooled
  • 1 cup of whole milk
  • 2 tablespoons white vinegar
  • 1 teaspoon of vanilla extract

If you are looking for a vegan variant of this same cake, you can easily use nut milk or soy milk instead of regular milk. The sweetened condensed milk can be substituted with any vegan alternative. The rest of the ingredients are all vegan-friendly.


Step 1

  • First Preheat the oven to 180 degree Celsius
  • Grease a 9×13” baking pan
  • Then line the bottom of this pan with good parchment paper & grease the top of the paper as well

Step 2

  • Combine all the flour, baking soda, baking powder & salt in the mixer bowl
  • Mix this using a whisk to combine (do not use the paddle right now)
  • Stir in all the sugar, and then give it another whisk

Step 3

  • Slowly make a well in the centre of this flour mixture
  • Add the melted butter, sweetened condensed milk, whole milk, vinegar & the vanilla extract
  • Now place the bowl on top of the mixer
  • Mix on a low speed with the paddle attachment
  • Mix it until everything is properly combined and largely lump-free
  • This batter will be quite thick, somewhat like the consistency of pancake batter

Step 4

  • Spoon all the mixture into a prepared baking pan
  • Spread it to fill out your pan evenly
  • Put it into the pre-heated oven
  • Bake for 25 to 30 minutes/until the cake is nice and golden, has set on the top & its sides have started to slightly pull-away from your pan.

Step 5

  • Remove it from the oven & transfer it to a wire rack
  • After a few minutes, run a clean, sharp knife right around the pan’s perimeter to loosen the sides
  • Let the cake then cool to room temperature before you slice it

How to use your finished cake

  • You can top the cooled cake with some delicious homemade ganache
  • Use the eggless vanilla cake as a ‘poke’ cake – you just have to poke all over the top of the cake and then pour some syrup all over it- this will lend it a delicious, sweet flavour
  • You can also use some dulce de leche spread all over the cake – this is delicious too
